Youcannot chose who to play in Origins. You play Bayek for around 99% of the game but there are some short sections when you play as Aya. Apart from Odyssey and Valhalla, there are two Assassin's Creed games where you can play as a female protagonist for most of the game (more if you include the Chronicles series but I haven't played those).

Goslowly and don't rush through the story, it's not going anywhere. Do side quests and explore the world. Try to stay a level or two above the main quests - but don't go too far ahead or they'll be too easy. Don't engage any enemies with a red skull above their heads because they will fuck you up.
